German Pasta Adventures: Making Spaetzle from Scratch with the Bonzer Boys!
Leopold and Papa Christian are back in the kitchen, this time tackling a southern German classic: Spaetzle!
YouTube Video:
Spaetzle are small, soft egg noodles that are typically served as a side dish or in a hearty main course. This is part 1 of a 2-part series, where we'll first make the Spaetzle and then use them in a delicious Kaesespaetzle dish in part 2 (coming soon, so make sure to subscribe!).
Leopold had never made Spaetzle before, so we were excited to show him the ropes. We gathered our ingredients: 6 eggs, warm water, 500g of flour, and salt. We also brought out our trusty Thermomix (another German invention, of course) and a special Spaetzle Press.
The first step was to mix all the ingredients together in a bowl until the dough was sticky and soft, but not too soft. We used the Thermomix to do this, but you could do it by hand as well hand - Leopold loves the Thermomix. Just hit a button and wait for the perfect dough.
Next, we heated up some water and added salt to it once it started boiling. We filled the Spaetzle Press with dough and pressed it into the hot water. We waited until the Spaetzle floated to the surface and then gave it one more minute before scooping it into a bowl. We repeated this process until all the dough was used up.
Making the Spaetzle took us about 45 minutes (without a toddler), but with Leopold's help and our little dragon running around the kitchen, it took us closer to 2 hours. But that's the beauty of cooking with family - it's all about the experience.
Leopold is a great eater and he really enjoyed both the cooking process and the eating. We can't wait to show you what we'll do with the Spaetzle in part 2. Stay tuned!
And now, as promised, here's the recipe for our Spaetzle:
Ingredients:
6 eggs
500g flour
250ml warm water
Salt 1 tbs
Instructions:
Mix together the flour, eggs, and a pinch of salt in a bowl or using a Thermomix until the dough is sticky and soft.
Heat up a pot of water and add salt to it once it starts boiling.
Fill the Spaetzle Press with dough and press it into the hot water.
Wait until the Spaetzle float to the surface and give them one more minute before scooping them into a bowl.
Repeat the process until all the dough is used up.
Serve as a side dish or use in a main course
